In the Colt catalog the finish on the 1991s is stated to be "matte blue". Is it really blued or is it parkerized? The reason I ask is that I have had it for a while and plan on parkerizing it. Will muriatic acid remove the finish or will I have to do it another way?

The very first ones were parkerized. Within the first year or two they were matte blued. Now they are matte blue with surface-ground slide flats.
Let the 'smith do the removal of the old finish. While you can do it using Birchwood Casey's Blue & Rust Remover, you'll have to keep it from rusting afterward.
