The very first ones were parkerized. Within the first year or two they were matte blued. Now they are matte blue with surface-ground slide flats.
Let the 'smith do the removal of the old finish. While you can do it using Birchwood Casey's Blue & Rust Remover, you'll have to keep it from rusting afterward.
