Greg - I'm not from California but I'd advise against packin' your 1911 without a CCW permit. (Mostly, 'cause I hate to see anyone lose a hard earned 1911 - and it's not fair to a 1911 to spend it's existence in a 'property room' or worse, under a cutting torch!)
Where I live, you can pack a big ole knife, as long as it is visible (ie not concealed), except in a bar. Lots of folks carry clipit style knives in a front pocket. Anyone who sees the 'clip' knows you have a knife. Most bad folks will steer clear of you!
If it were me, I'd move to a state where I could legally carry, if I were so inclined.
