I'll be getting a 1911 pretty soon (happy birthday to me) and I've decided to get a Milt Sparks VMII because I've seen people with my build conceal it very well, and I hear it's real comfortable. However, due to its price and time of delivery I need a decent interim holster. Moderately priced, preferably IWB strong side. I'm not dead set on Kydex or leather yet. By the way, it'll be a full-size, probably Colt Gov't Model. Recommendations?

Since you are only looking for something to use in the interim until you get the Sparks, you might consider a Fobus. Not an IWB, but good quality, decent carry, and you can't beat the price.
